“Saleable glasses” may be fractional because it is an economic yield across bottles, not a promise that one open bottle finishes perfectly.
Wine margin needs a yield assumption
A 750 ml bottle theoretically gives six 125 ml measures, about 4.29 measures of 175 ml, or three 250 ml measures. Overpouring, tasting and discarded wine reduce that yield, particularly on slow-moving lines.
Measure visibility matters. UK premises selling still wine by the glass should show the quantities offered and make the smaller 125 ml measure available to customers.
